Remove pack from refrigerator and leave standing at room temperature for at least 2 hours.
Prepare all other ingredients required for recipe before pastry is opened.
Unroll required number of sheets on to a flat surface and cover completely with clear plastic wrap or moist tea-towel.
Reseal any remaining sheets into plastic bag, making sure it is completely airtight and return it to refrigerator for further use.
Store in the refridgerator.
